Black Pudding Salad

Ingredients:

  • 2 tbsp Camo’s Honey Mustard Dressing

  • 4 tbsp Camo’s Spiced Apple Chutney

  • Black Pudding (4 slices)

  • Rasherín (aka Rasher to those from outside the Kerry region)

  • Red Onions chopped

  • Cashel Blue Cheese 30g

  • Tomatoes

  • Lettuce

Instructions:

  1. Preheat oven to 175 ° C

  2. Chop your black pudding evenly and cook in the oven with 1 rasher

  3. Mix lettuce, tomatoes, red onions & blue cheese in a salad bowl

  4. Place 3 dollops of Camo’s Spiced Apple Chutney on a plate & place 1 piece of black pudding on each dollop (save the last one to the side)

  5. Chop up your rasher and mix in with your salad while hot to melt the blue cheese

  6. Add Camo’s Honey & Mustard Dressing to your salad mixture and toss

  7. Add the salad to the center of your triangle of Black pudding and top with the final pudding piece & enjoy!
